Qaenat puffed barberries

Puffed barberries from Qaenat: red, large and fleshy, dried in the shade to keep their colour and tartness. Sorted and cleaned, with no stems or debris.

For zereshk polo with chicken, tahchin and kuku; soak in cold water for a few minutes, then sauté with a little butter and sugar. Keep in the fridge so they stay red; use within twelve months of the packing date.
